
I was browsing around the ready meals section in M&S recently looking for something nice and easy to prepare and which all the family would like AND was healthy. I couldn’t find anything that particularly appealed until I got to the vegan / plant based section.
There were so many delicious looking meals it was hard to choose, but I purchased this Sweet Potato Falafels dish which comes with a cashew nut & cannellini dip. They have 104 calories each.
M&S have such a great reputation for the quality of their food and their ready meals are exceptional. I like to have the odd ready meal in the fridge or freezer on standby for those days when I get home and don’t feel up to preparing a whole meal from scratch. I’ll always prepare vegetables though, whatever the main part of the meal.
My eldest daughter is a vegetarian so it was nice not having to worry about serving this up for her. In fact my whole family is eating more and more vegan and vegetarian food these days so it’s great having so much choice of inspirational food in the stores.
The falafels couldn’t be easier to prepare. Just pop onto a baking tray and into the oven for 8-10 minutes. I also prepared some sweet potato chips and popped them onto the baking tray first. While this was happening I prepared a simple salad to serve with them.
Once they’re ready, I placed the falafels onto the salad and drizzled the dressing over the top.
These were such a hit with everyone that I’ve bought them again. They have a lovely crunchy outer layer with a soft and delicately spiced centre. The cashew dressing is absolutely delicious which also added extra flavour to the salad.
These falafels aren’t suitable for freezing so you need to eat them quite soon after purchasing.

NOTE: although they are suitable for vegans, there is a note on the pack stating that they are prepared to a Vegan recipe but are not suitable for milk or egg allergy sufferers because these allergens are present in the environment. They are not suitable for those with a nut allergy.
