Risotto is a popular rice dish that’s fairly easy to make yourself. It does require constant attention to get it just right, so sometimes it’s more convenient to buy a ready-made version.
There are plenty to choose from in the supermarkets, however, risotto isn't usually very diet friendly.
Many creamy risotto’s are high in fat and calories.
For example Sainsbury’s Mushroom risotto has 22.4g of fat and 502 calories per 400g meal. But if you choose Sainsbury’s Be Good to Yourself Chicken & Mushroom Risotto, the entire 400g pack has only 306 calories and 5g of fat.
Despite being so low in fat, this risotto is still lovely and creamy with big chunks of chicken and plenty of mushrooms and peas. Although the pack states it serves one, by adding some extra vegetables there’s easily enough for two portions.
It’s simple to cook. Just take it out the freezer, pierce the clear film lid a few times and pop it into the microwave for 7-8 minutes. Alternatively cook it in the oven from frozen in 40 minutes.
